Wolf Vanilla Latte

We make our vanilla syrup in-house. No bottle, no pump you can see. Sugar, water, vanilla bean — slow on the back burner until the kitchen smells like the inside of a cookie tin.

This is the drink we ended up calling the Wolf Vanilla Latte. Two shots, our house vanilla, milk steamed or iced. The vanilla modifier attaches to about a third of all drinks we sell, and most of them ride on a latte. Felt like the right thing to give it a name and a place on the menu.

It drinks differently from the bottled version most shops use. Less sweet. Rounder. Closer to vanilla, further from candy. Whole milk is the default and works the best with this one. Order it 16oz iced — that is how nine out of ten leave the bar.
